For over 20 years, my life was food. As an R&D Professional in the U.S. food industry, I travelled the world, exploring ingredients and discovering new tastes. But one experience changed everything.
It was on one of my many trips to Mexico that I found my true inspiration. I had heard whispers of the legendary Santiago Barbacoa, a place revered for its authentic, pit-cooked meats. On my first visit, my team and I arrived at 9 a.m., only to be met with a surprising sight: they were completely sold out. The sheer demand was a testament to the quality and tradition held within.
Determined, we returned at the crack of dawn the next day. What we experienced was nothing short of a culinary revelation. The sight of succulent, slow-cooked barbacoa being pulled fresh from the traditional earthen pit, the steam carrying an aroma of spices and roasted meat, was unforgettable. We savored the array of preparations, each bite a perfect blend of smoky, tender, and juicy flavor
That experience planted a seed. It was more than just a delicious meal; it was a celebration of tradition, patience, and community. I knew, in that moment, that I had to bring this authentic method of cooking—this incredible experience—to my home in Tamil Nadu.
And so, Barbacoa Restaurant and Grill was born.
